MONKFISH WITH PRAWNS & GRAPE FRUIT
1 Monkfish skinned and filleted
Flour for dusting
2 spring onions
2 cloves garlic
2 grape fruits
1 small glass white wine
Portion the fish fillets, season with salt & pepper & roll through the flour. Shallow fry the fish in oil and butter with the whole garlic until nicely browned. Add the prawns and splash with the white wine.
Stir in the cream and the grapefruit segments with the obtained juice. Finish with the spring onions and chopped parsley.
