KUSKSU BIL-FUL

Ingredients:
1 onion
2 cloves garlic
1 chopped carrot
1 chopped potato
1 chopped courgette
1 can tomato pulp
500 ml chicken stock
Broad beans
Peas
Kusksu pasta
Fresh gozo cheese or ricotta
Grated cheese

KUSKSU BIL-FUL

Method:
Shallow fry the onion, garlic, carrot, potato & courgette in a spoon of olive oil. Add the tomato & the chicken stock, bring to the boil, reduce for 20 min. Add the pasta, beans & peas and simmer again for 20 min . Place the ricotta or the cheeselets in the soup and erve sprinkled with chopped parsley & grated cheese
